Wild Turkey Steaks with Strawberries and Cream

8 ounce turkey breast per person 1 qt. of fresh strawberries 2 Cups of diced mushrooms 2 Cups of chicken or turkey stock 2 ounces of fresh heavy cream 2 ounces of Strawberry Schnapps 1/3 Cup of onions, diced fine 1 teaspoon of corn starch 1 Tablespoon of fresh parsley, chopped Salt and pepper to taste
Instructions:
Slice and pound (tenderize) turkey steaks between plastic wrap. Dredge steaks in flour and saute one minute per side. Remove steaks from the pan. Saute onions and simmer for one minute with Schnapps.
Add stock and boil to reduce volume by one quarter. Add cream, berries and mushrooms to onions. Mix corn starch with water. Add slowly to mixture until it reaches the desired thickness. Return the steaks to the pan and cook for 2 to 3 minutes (do not overcook).
Top with parsley and serve with wild rice and asparagus. Serves 4 to 5.
